Cocoa Brownie Squares
There are two kinds of brownies – fudge or cake. The cake variety can be served with frozen yogurt or a dollop of whip cream. Both are lovely with a sprinkle of powdered sugar sifted on top.

Replace the eggs with liquid egg substitute.
Use only low fat yogurt.
Replace chocolate with a high quality cocoa powder.
Eliminate the nuts.

Makes 16 (2-inch) brownies

Ingredients:
3/4 cup all-purpose, unbleached flour
1/2 cup unsweetened cocoa powder
1/2 tsp. salt
3/4 cup liquid egg substitute
1-1/2 cups golden brown sugar, packed
1/4 cup vanilla yogurt, low fat
2 tbsp. unsalted butter, melted
2 tbsp. canola oil
1 tsp. vanilla extract

Sift flour, cocoa, and salt together. Oil an 8-inch square baking dish. Heat oven to 350º. Combine egg substitute and brown sugar in a bowl and whisk until foamy. Add yogurt, butter, oil, and vanilla. Continue to whisk until sugar is dissolved. Stir in dry ingredients and mix. Pour batter into the baking dish, smoothing the top out evenly. Bake until a skewer comes out clean, about 20 to 25 minutes. Cool completely.
