Creamy Feta and Spinach Dip
This creamy, low fat dip goes nicely with raw vegetables or baked pita chips.

By draining the low fat yogurt, you can make a creamy cheese that can be the base of many dips.
Low fat cream cheese and sour cream can be substituted with little detection because they simply add a creamy texture.
Use fresh herbs whenever possible to enhance flavors.

Makes 2 cups.

Ingredients:
8 oz. plain yogurt, low fat
3/4 cup feta cheese, crumbled
1/4 cup cream cheese, nonfat
1/4 cup sour cream, nonfat
1 clove garlic, minced
1-1/2 cups fresh spinach, finely shredded
1 tbsp. fresh dill, chopped
1/8 tsp. black pepper

Spoon yogurt onto several layers of heavy-duty paper towels and spread to 1/2-inch thickness. Cover with additional paper towels and let stand for 5 minutes. Scrape the yogurt into the bowl of a food processor. Add the feta, cream cheese, sour cream, and garlic. Process until smooth. Fold in the spinach, dill, and pepper. Cover and chill before serving.
