Low Fat Yogurt Cheese
By draining yogurt, you can make a creamy “cheese” that serves as the base of many low fat dips.

Replace traditional sour cream with yogurt “cheese.”

Makes about 2 cups

Ingredients: 1 quart plain yogurt, low fat (no gelatin added)
1/8 tsp. salt, or to taste
1/8 tsp. pepper, or to taste

Place yogurt in a large cheesecloth-lined sieve suspended over a bowl. Make sure there is enough room for the whey to drain off. Cover and refrigerate overnight. Remove the cheese from the sieve and discard the liquid. Transfer the cheese to a small bowl and season with salt and pepper to taste.
