Caesar Salad
A classic Caesar dressing that is lower in fat and sodium.
♥ Replace eggs and most of the oil with low fat mayonnaise.
♥ Add low fat buttermilk to thin consistency.
♥ Instead of tossing Parmesan with the salad, add it into the dressing and get the same flavor with less dressing.
Makes 6 servings
Ingredients:
3/4 tsp. anchovy paste
1 tsp. garlic, minced
1/2 tsp. Dijon mustard
1/4 tsp. salt and a pinch of black pepper
1-1/2 tbsp. fresh lemon juice
3 tbsp. mayonnaise, low fat
2 tbsp. extra virgin olive oil
2 tbsp. Parmesan cheese, freshly grated
2 to 3 tbsp. buttermilk, low fat
10 cups of Romaine lettuce leaves, washed, cut, and thoroughly dried
1-1/2 cups plain croutons
Combine anchovy paste, garlic, mustard, salt, pepper, lemon juice, and mayonnaise in a bowl. Whisk in the oil, Parmesan cheese, and enough buttermilk to make the dressing consistent. Cover and chill until ready to serve. Let lettuce dry to get the full intensity of the dressing. Garnish with croutons.
